But nowadays there are veggies, and then there are other veggies. In terms of nutrition, they\u2019re not all created equal.<br \/>\nImagine a graph that measures nutrition. At the bottom there is very little nutrition, and at the top there\u2019s lots.<\/p>\n<figure id=\"attachment_53538\" class=\"wp-caption alignnone\" aria-describedby=\"caption-attachment-53538\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-53538 size-full\" src=\"https:\/\/www.permaculturenews.org\/wp-content\/uploads\/2020\/08\/nutrition-graph.-2000px.png\" alt=\"Nutrition\" width=\"700\" height=\"467\" \/><figcaption id=\"caption-attachment-53538\" class=\"wp-caption-text\">Image by author, Kate Martignier<\/figcaption><\/figure>\n<p>On this graph, I\u2019d place supermarket vegetables at the bottom, heirloom varieties of vegetables and herbs from home gardens, community gardens, and small, diverse farms in the middle, and wild\/undomesticated plants (many of them known as \u201cweeds) at the top.<\/p>\n<p><strong>Supermarket Veggies \u2013 Seriously Lacking In Variety And Nutrition<\/strong><\/p>\n<p>The food plants we see in the supermarket represent a tiny sliver of all the food plants available to us.<\/p>\n<blockquote><p>There are over 20,000 species of edible plants in the world yet fewer than 20 species now provide 90% of our food<strong>.<\/strong><\/p>\n<p><a href=\"https:\/\/pfaf.org\/user\/edibleuses.aspx\" target=\"_blank\" rel=\"noopener noreferrer\">Plants for a Future<\/a><\/p><\/blockquote>\n<p>Besides being a very narrow representation of the plant foods available to us, supermarket vegetables are the least nutritious veggies you could be eating.
